Domaine Chantal Lescure - Pommard - Les Vaumuriens 2019
Domaine Chantal Lescure is located in the town of Nuits-Saint-Georges , in Burgundy . Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont , the family estate now operates 19 hectares of vines, to the north on the hillsides of Dijon and to the south as far as Meursault. Aymeric and Thibault Machard de Gramont , the two sons of Chantal Lescure, took over the estate when their mother died in 1996. Each year, they produce 19 cuvées from 35 plots. The vineyard is entirely cultivated in certified organic farming since 2006.
Pommard Les Vaumuriens comes from Pinot Noir vines over 45 years old, planted on the left hillside of Pommard. The terroir is brown limestone on white marl and hard limestone. After the manual harvest, the grapes are sorted, destemmed and not crushed. A pre-fermentation maceration is carried out, followed by a gentle and long fermentation in stainless steel vats. Fermentation lasts 18 to 25 days, punching down is moderate. Aging takes place in a cold cellar on the lees, in 500-litre barrels , 30% of which are new.
