Khayyâm is a vintage that pays homage to Omar Khayyâm, a Persian poet and mathematician who wrote several poems celebrating wine and women. It is a blend of Grenache (70%), Mourvèdre (15%) and Syrah (15%) . The harvest is entirely manual with strict sorting at the plot. During vinification, the Grenache and Mourvèdre clusters are destemmed and lightly crushed and the Syrah is vinified in superimposed layers: whole clusters, destemmed and crushed. The grape varieties are assembled in the vats, maceration lasts 15 days, with some punching down. The wine is then pressed and aged for 9 months, in casks for 50% of the wine .
