Domaine Christian Moreau - Chablis 1er Cru Vaillon - Cuvée Guy Moreau 2020
Domaine Christian Moreau is located in Chablis . In 1814, Jean Joseph Moreau, cooper in Montbard, founded the company J. Moreau et Fils, wine merchant and broker in Chablis. Over the years, the family became the owner of prestigious plots of land, including the Clos des Hospices monopoly. In 1972, after living in Canada for 11 years, Christian Moreau returned to Chablis with his Canadian wife Christine and their children. He then learned from his father, Guy Moreau, the profession of winegrower and winemaker. In 1998, the Boisset group (of Nuits Saint Georges) bought the J. Moreau et Fils trading house. The family retains all of its vines and regains the right to exploit, vinify and market the grapes from its plots from the 2002 vintage, the date on which Fabien Moreau took over management of the estate. From 2004, he definitively abandoned the use of herbicides and pesticides and gradually began converting the estate into organic farming , with certification from the 2013 vintage. Today, he farms 12 hectares of Chablis Grand Cru (Les Clos , Clos des Hospices, Valmur, Vaudésir, Blanchot), Chablis Premier Cru Vaillon, Chablis and Petit Chablis.
The Premier Cru Vaillon is located on the left bank of the Serein River. The Moreau family owns 6 plots facing south and southeast. The soil dates from the Kimmeridgian period with clay-limestone marls, very rich in marine fossils. The Cuvée Guy Moreau comes from a 1 hectare plot, the vines of which were planted in 1933 by Guy Moreau, Christian's father. The harvest is manual and the grapes are sorted manually. They are pressed away from oxygen then cold settled before fermentation. Vinification is carried out in stainless steel vats (60%) and in barrels of 2, 3 and 4 wines (with less than 5% new barrels) for 9 months . These two batches are assembled in vats 6 months before bottling.
