Domaine Samuel Billaud - Chablis 1er Cru Les Vaillons 2023
In Chablis, Samuel Billaud has established himself as one of the most precise signatures of the vineyard, with whites recognized for their brightness, clarity, and intense minerality. Coming from a historic family of winemakers, he long vinified within the family domain Billaud-Simon before building his own universe, centered on a rigorous reading of the great Chablis terroirs. His style seeks less power than accuracy: adjusted maturities, measured aging, natural tension, and that saline purity belonging to the finest Chardonnays of northern Burgundy. Les Vaillons is one of the emblematic premier crus of the left bank of the Serein, with an expression often more floral, more open, and more immediately seductive than some more austere crus. In the 2023 vintage, sunny but balanced, this cuvée finds a very beautiful meeting point between fruit maturity, limestone energy, and the depth of old vines. It reveals a Chablis Premier Cru that is both expressive, chiseled, and gastronomic, built to age without losing its liveliness.
This cuvée comes from Chardonnay from old vines located in the premier cru Les Vaillons, on soils of white clays and Kimmeridgian limestone marls. The plot worked by Samuel Billaud borders the Séchet climate, with old vines often cited as approaching 80 years, capable of producing sparse, concentrated, and sometimes millerandé grapes. This origin explains the particular depth of the wine, which goes beyond simple Chablis freshness to gain density, relief, and persistence. The aging remains discreet and perfectly adjusted, in the spirit of the domain, to accompany the tension of the cru without masking the purity of the fruit or the minerality. Available information indicates cultivation according to organic principles, as well as a profile of dry white wine, made exclusively from Chardonnay. The 2023 vintage brings a fleshier character than very cold years, but the backbone of the terroir maintains a long, saline, and energetic finish. This Vaillons 2023 thus possesses the depth of a wine for aging, while retaining great clarity in its youth.
The color presents a bright pale gold, with luminous reflections that announce a wine both ripe and tense. The nose opens on yellow lemon, mandarin, grapefruit, Granny Smith apple, and candied lemon, then evolves towards notes of white flowers, acacia, linden, lemon verbena, and fresh mint. Upon aeration, deeper nuances appear, around chalk, oyster shells, gunflint, almond, fine honey, and a slightly pastry touch. On the palate, the attack is clear, saline, immediately mouthwatering, with a continuous mineral line that runs through the entire tasting. The mid-palate gains volume thanks to notes of juicy peach, candied orange, and ripe pear, but the whole remains slender, precise, and very Chablis-like. The finish extends the citrus, mineral bitters, and a persistent chalky sensation, with a tension that calls for food. This Chablis 1er Cru Les Vaillons 2023 will pair remarkably with seared scallops in brown butter, meaty oysters, turbot with lemon sauce, sole meunière, creamy poultry, seafood paella, or a lightly aged Langres cheese. Served around 11 to 12°C, after an hour of aeration in its youth, it will fully express the depth, precision, and saline nobility of the Vaillons terroir.
