Domaine du Puy de l'Ours - Les Monsnières - Côte de Beaune - White 2023
Domaine du Puy de l'Ours is located in Savigny-lès-Beaune, on the Côte de Beaune in Burgundy . It was founded in 2021 by Jean Orsoni and Juliette Puyperoux following the takeover of 5 hectares of family vineyards, spread between Savigny-lès-Beaune and the Côte de Beaune, including some Premier Cru plots. The estate is converting to organic farming and the winemaking is minimally interventionist.
Les Monsnières is made from Chardonnay from a 1.49-hectare plot located at the top of the slopes of Beaune, at an altitude of 350 meters. The vines, planted in 1992 and partially replanted in 2015 and 2016, benefit from a rocky clay-limestone terroir. Pressing is carried out on whole bunches, with a cold settling of 24 to 48 hours. The wine is aged for 12 months in oak barrels of 228 to 400 liters .
