RUM A1710 - Fort Saint Louis - White Rum - 55.2%
The history of the Assier family in Martinique began in 1710 when Jean Assier, a young lawyer from Montpellier, arrived on the island and worked in the service of the Governor of Phélypeaux. A few centuries later, his direct descendant, Yves Assier de Pompignan , embarked on a bold and exciting project: the creation of a new rum distillery carrying within it the history and richness of the Antilles terroir. Indeed, the takeover of the Habitation du Simon, ideally located in the heart of an exceptional terroir, and the unfailing passion that drives him for his island and its riches, have allowed Yves Assier de Pompignan to work for many years to create a brand of rum combining tradition and modernity .
In 2010, the decision was made to launch the project and then began the work of selecting the great old rums intended for blends. An aging cellar equipped with a barrel previously used for Cognac and a laboratory were created at the Habitation. The first selections, then aged 6 to 11 years, were put back to age in 320-liter French oak barrels. At the same time, the search for an innovative, qualitative and traditional distillation solution led Yves Astier to choose a Charentais still entirely made of copper, completed with a seven-plate column . Temperature-controlled fermentation tanks allowing long fermentations were chosen in order to obtain cane wines with strong aromatic potential. The long and tedious administrative procedures were completed on December 31, 2015 following the authorization to open a distillery intended for the production of Rhums Agricole. Work then began on the rum distillery, which was installed in a former 18th-century sugar refinery at the heart of the estate. Finally, after 10 years of learning and imagining, the brand-new A1710 distillery was inaugurated in December 2016 at the Habitation by Yves Assier de Pompignan and his team.
A1710 Rums are produced organically from sugar cane grown on a plot of land cultivated without fertilizers, pesticides, herbicides or other chemicals, planted on the site and where two varieties of cane grow: " Blue Cane " and " Purple Cane ".
The A1710 x Fort Saint-Louis rums are an exceptional collaboration between the A1710 distillery and Fort Saint-Louis, a French Vauban-style military fort located in Fort-de-France, a listed historic monument and a naval base of the French Navy in the Antilles. This limited edition consists of two vintages: a white rum and an aged rum, both carefully crafted by cellar master Cédric Paviot. The white rum was produced in a limited edition of 600 bottles.
