After the harvest, the grapes are sorted and selected in the cellar before being gently pressed. The juice flows by gravity into the cellar. Fermentation takes place with indigenous yeasts. The wines are aged in the vaulted cellar built in 1829, in 80 wooden barrels. The oldest of these barrels dates back to 1890, and each barrel contains the harvest from a single plot of the vineyard.
100 Hügel (100 hills) comes from the fertile hills of Rheihessen. The grapes are harvested manually and completely destemmed. The grapes undergo a short skin maceration before fermentation in stainless steel tanks .
Grape variety: 100% Riesling
