Champagne Chavost - Chardonnay white - Brut Nature
Champagne Chavost is located in Chavot-Courcont, in the Marne Valley in Champagne . The estate was founded in 1946 by around twenty winegrowers from the village. Since 2019, Fabian Daviaux , a trained oenologist, decided to transform the initial cooperative by cultivating 5 hectares of vines with the aim of creating winegrowers' champagnes. Upon his arrival, he converted the vineyard to organic farming and is committed to preserving the environment and its terroir. He develops an atypical range, with the least possible inputs and without the addition of sulfites.
Blanc de Chardonnay is made from Chardonnay from the first press. The vines are grown on a north-facing clay-limestone terroir. The harvest is manual, at optimal ripeness. Vinification is carried out in stainless steel vats without the addition of sulfites. The champagne is bottled without dosage .
