Domaine de Brin - Brin de Folie 2023
Domaine de Brin is located between Albi, Gaillac and Cordes in the Gaillac AOC, on a clay-limestone plateau. The former family estate is now managed by Damien Bonnet , who is committed to applying organic cultivation and natural winemaking methods. A majority of typical Gaillac grape varieties with a strong identity, such as Duras, Braucol and Prunelart for red, Mauzac, Loin de l'œil and Ondenc for white, are cultivated on the 12 hectares of the estate.
Brin de Folie is made from Cabernet Sauvignon , grown on a clay-limestone terroir at an altitude of 280 meters. The manual harvest is carried out late after the berries have ripened by passerillage . The whole bunches are put into direct pressing. Fermentation begins spontaneously with indigenous yeasts, then is stopped by filtration once the residual sugar level is reached.
