Domaine de l'Enclos - Cuvée À l'Ouest - Chablis - Magnum 2023
Founded by Romain and Damien Bouchard, Domaine de l'Enclos embodies a single-vineyard and organic vision of Chablis. The vines, worked with precision and without artifice, produce wines that are straightforward, saline and luminous, where the purity of the Chardonnay interacts with the chalky energy of the Chablis hillsides.
À l'Ouest 2023 comes from the westernmost plot of the estate, a sunny hillside that preserves freshness. Vinification is carried out without additives or added sulfites, and the entire wine is aged in tanks to retain the vibrancy of the fruit and the chalky structure. The magnum format prolongs the evolution, protects the aromatic expression, and allows for a slower aeration, ideal for serving at the table and for cellaring for five to eight years.
The nose opens with white flowers, ripe lemon, and crisp pear, joined by a touch of raw almond and a hint of damp stone. The palate is direct and juicy, with a crisp attack leading to a heart of citrus and white fruit edged with a distinct minerality. The wine gains volume without losing its momentum, carried by a precise salinity. The finish is long, dry, and flavorful, with notes of zest, chalk, and a hint of iodine that extends the persistence.
At the table, this magnum pairs well with oysters and shellfish, citrus-infused sea bass ceviche, sole meunière, or pike-perch with beurre blanc sauce. It complements roasted poultry with lemon, asparagus risotto, pan-fried chanterelle mushrooms, and hard cheeses such as a mature Comté, whose sweetness balances the wine's acidity.
