Domaine de l'Enclos - Cuvée À l'Ouest - Chablis 2023
Born from the meticulous vision of Romain and Damien Bouchard, Domaine de l'Enclos embodies a new generation of Chablis winemakers dedicated to their terroirs. The vineyard, certified organic, covers all appellation levels and relies on precise soil and grape ripening management to produce wines that are clean, precise, and vibrant.
À l'Ouest 2023 comes from the westernmost parcel of the estate, three hectares located on the upper slopes of Beine, facing due south, above the Premier Cru Vau Ligneau. This single-vineyard cuvée is vinified and aged without any additives, without added sulfites, to deliver a direct expression of the terroir and the vintage. The exclusive use of stainless steel tanks preserves the vibrancy of the fruit and the chalky tension characteristic of this area.
The nose opens with aromas of white flowers, ripe lemon, and fresh pear, joined with aeration by a touch of raw almond and a hint of damp stone. The palate displays a crisp attack followed by a juicy, chalky texture. The mid-palate blends citrus, white fruit, and a saline note that invigorates the wine's structure. The finish is long and clean, with a reminder of zest and chalk, and a lingering freshness that reflects the sunny exposure resulting from the altitude.
At the table, À l'Ouest 2023 shines with oysters, sea bass tartare with citrus, sole meunière, or pike-perch with beurre blanc. It pairs well with roasted poultry with lemon, asparagus risotto, and hard cheeses such as a mature Comté, whose sweetness underscores the wine's tension.
