Domaine Roland Lavantureux is one of the most solid and appreciated signatures in the Chablis region. Located in Lignorelles, north of Chablis, it is part of an old family history marked by the transmission of land, vines, and know-how over several generations. Roland Lavantureux played a decisive role in the development of the estate by initiating bottling from 1979, before his sons Arnaud and David continued the adventure with a strong qualitative ambition. The house style is based on intense, lively, and precise Chablis, where the natural richness of the fruit is always supported by limestone minerality. Fourchaume 2023 embodies one of the noblest expressions of the estate, in a Premier Cru renowned for its balance between breadth, elegance, and finesse. This climat, located among the most sought-after areas of Chablis, produces wines often rounder and more generous than other stricter Premier Crus. The cuvée thus offers a refined reading of Chablis Chardonnay, both accessible in its charm and serious in its structure.
The Chablis Premier Cru Fourchaume 2023 cuvée is made exclusively from Chardonnay, the emblematic grape variety of the appellation. It comes from the west-facing part of Fourchaume, in the middle of the climat, where late afternoon sunshine favors regular ripening and natural roundness. The soils, mixing clay and limestone, give the wine an expression that is delicate, precise, and deeply Chablisian. This cuvée has been produced by the estate since 2010, as part of a sustainable partnership on about one hectare of the appellation. Alcoholic fermentation takes place in stainless steel tanks to preserve aromatic finesse and fruit clarity. The 12 to 15 months aging combines the freshness of stainless steel with the depth brought by barrels, with a balanced proportion between the two containers. The result is a broad, elegant, and perfectly structured Premier Cru Chablis, where the richness of Fourchaume is held by a fine and precise finish.

The nose opens on white flowers, pear, ripe apple, yellow lemon, and fine citrus fruits, with a touch of wet stone and a delicately toasted nuance. The palate is generous, broad, and enveloping, faithful to the sunny and elegant character of Fourchaume. The texture gains depth thanks to partial barrel aging but retains a clear freshness and beautiful mineral tension. The finish is long, precise, and subtly saline, with a limestone sensation that extends the wine without heaviness. This Premier Cru can be enjoyed after a few years in the cellar, ideally between three and ten years depending on storage conditions. It will perfectly accompany meaty oysters, scallops, a noble fish, creamy poultry, gougères, lobster, or an aged goat cheese.
