Maison des Ardoisières - Silice Blanc 2025
The Maison des Ardoisières continues the work carried out by Brice Omont at the Domaine des Ardoisières, one of the key players in the revival of Savoyard winemaking. This trading activity is based on a demanding selection of organic grapes grown by partner winemakers and carefully monitored throughout the year. It allows exploration of other Alpine terroirs while maintaining the principles that have shaped the house's identity: manual harvesting, spontaneous fermentations, and low-intervention aging. Silice Blanc comes from the Apremont area, at the foot of Mont Granier, in a landscape shaped by limestone scree and the reliefs of the Chartreuse. The Jacquère naturally develops low alcohol content, lively acidity, and a discreet aromatic expression here. Brice Omont seeks in this cuvée the clarity of fruit, fluidity, and stony sensation typical of mountain whites. Silice thus constitutes an accessible introduction to the universe of the Ardoisières, without sacrificing the precision that characterizes the house's wines.
Silice Blanc 2025 is made exclusively from Jacquère grapes from old vines grown organically on the slopes of Apremont. The grapes are hand-harvested, with deliberately limited yields to obtain more concentrated and better-balanced juices. The whole harvest undergoes gentle pressing, followed by a light cold settling that preserves aromatic finesse. Fermentation begins naturally thanks to indigenous yeasts present on the grapes and in the cellar. It takes place in tanks, without seeking a woody character that might mask the delicacy of the grape variety. The wine then continues its aging for nine months in these same containers to maintain a straightforward and immediately readable expression. The 2025 vintage shows a moderate alcohol level of 11%, perfectly consistent with its fresh, light, and Alpine profile.
The pale yellow robe is bright, with green and silvery reflections. The nose opens on crunchy apple, fresh pear, and lemon, then reveals notes of white flowers and dry herbs. A hint of white pepper and an impression of crushed stone give the bouquet more relief. The palate is lively from the attack, with a fine texture that favors length rather than volume. Citrus and green apple accompany a tonic acidity, while a slight roundness tempers the natural tension of Jacquère. The finish, clean and persistent, extends on bitter almond, zest, and a refreshing mineral sensation. Silice Blanc will accompany an aperitif, perch fillets, smoked trout, fish carpaccio, salmon rillettes, or fresh goat cheese.
