At Château La Dominique, the harvest is manual, the bunches are then sorted and sent to the vat room in bastes (wooden containers for transporting the grapes). Upon receipt, they are sorted a second time on the table and then undergo total destemming. The vinification process respects the plot lots with fermentation in thermo-regulated stainless steel tanks of low capacity (60 to 100 hl), a long maceration of 25 to 35 days, a malolactic fermentation mainly carried out in new barrels. For 15 to 18 months, the wine is matured entirely in barrels, 50 to 70% of which are renewed each year, by under-pulling in a reasoned way and by practicing regular stirring of the lees. An egg white fining is done before bottling at the property (up to 80,000 bottles / year).
All the bottles displayed in our website are stocked in our cellar in Bordeaux.
