The harvest is carried out manually using crates with sorting before and after destemming . The vinification takes place in new thermoregulated stainless steel tapered tanks with gravity filling, tanks adapted to the plot approach . The 4-week pre-fermentation maceration takes place at 3 ° C. Alcoholic fermentation is followed by a long post-fermentation maceration. The malolactic fermentation takes place partially in barrels (20% for the 2010 vintage) and the 12 to 16 month aging is carried out in barrels (60% new, the rest of a wine). The gluing is done with egg white.
