Rhumrhum is one of the youngest distilleries in the Caribbean, it was founded in 2006 by the association of big names of rum: Velier, Capovilla and Bielle. It is also hosted in Bielle although it is independent (except for its supply of cane juice). This distillery is distinguished by a revolutionary approach and seeks to bring a wave of novelty hoisting its agricultural white rum among the largest. For example, juices are fermented directly without dilution with water as is customary then the fermentation process is rigorously controlled for slow fermentations ... that go up to 7 to 9 days! This gives their rums an incomparable aromatic richness. The vesou is then subjected to a double distillation in two brass stills heated in a bain-marie (technique by Bernd Müller). Some of their rum is then aged in old barrels of bourbons, burgundy and sauternes.
Libération 2017 Versin Intégrale 58.4% is therefore a work of Luca Gargano and Gianni Capovilla, Master distiller well known. This is the raw version of barrel still called full proof, that is to say, it was not reduced to water as his little brother to reduce his titration. RhumRhum PMG produces rums in the heart of the Bielle distillery, certainly one of Marie-Galante's most authentic distilleries. Following the 2010 harvest, the eaux-de-vie were aged for 7 years before being "released". The name of this cuvée pays homage to a little known moment of the life of the rum, its racking when it is going to be bottled, it is thus dated not of its harvest but of the moment of its racking. Libération 2017 presents a richly ornamented aroma profile which gives it a captivating character. We will note the graphic labels and cases that vary over the vintage, true signature of the brand!
