J. Bally is located in Carbet, Martinique not far from Mount Pelée. The origins of J. Bally go back to 1917 when Jacques Bally bought a sugar company then in ruins, the Lajus estate (which dates back to the 1670s). A true visionary, this young engineer from the Ecole Centrale de Paris then equipped him with a steam engine and a Creole column of his own, inspired by the processes of elaboration of fine alcohols such as Cognac. He became one of the pioneers of aging techniques for agricultural rums. In order to strengthen his brand, he decided to offer his production a strong identity through a uniquely designed bottle first in the shape of a pyramid and then in a square shape. Today it is Saint-James that distills Bally rum.
This Bailly XO is a rum aged at least 6 years. Bottled in its magnificent "pyramid" bottle created in the 1930s by the founder of the Bailly brand. it counts 43%.
