Domaine Paul Prieur - Pieuchaud Silex 2017
Domaine Paul Prieur et Fils is located in Verdigny, in the Sancerre appellation of the Loire Valley . Winegrowers for 11 generations, today Luc and Philippe Prieur run the estate. They cultivate 13.5 hectares of Sauvignon Blanc on the limestone terroirs of Verdigny and Chavignol (Caillottes and Terres Blanches) and Silex in the village of Thauvenay. They also produce red wines on 5 hectares at a place called Les Pichons, planted in the 1950s in mass selection. The Domaine is in the process of being certified for organic farming.
The Pieuchaud cuvée is made from Sauvignon Blanc grown in the locality of the same name in the village of Thauvenay, whose terroir is made up of clay and flint. The harvest is manual, no sulfur is added before fermentation. The grapes are pressed and then settled in order to mature on total lees, without stirring. The aging lasts 15 months , in wooden vats of 16 hectoliters (80%) and in tons of 600 liters (20%).
