The Sacred Wood - Elise's Apron 2018
The Bois Sacré is located in Lucq-de-Béarn, in Jurançon . In 1888, the Saint-Martin family moved into the Cougot house, and since then, generations have followed one another on the farm between breeding, corn cultivation and viticulture. In 1980, Pierre (the great-grandson) and his wife Rose-Marie turned more to viticulture by restructuring and expanding the vineyard. Today, Laurent and Pauline , the fifth generation perpetuate the family heritage by adding another dimension: the creation of the Le Bois Sacré wine estate. The vineyard covers 4 hectares facing the Pyrenees at an altitude of 280 meters. The management of the vines takes place with respect for the environment, without certification.
Le Tablier d'Elise is a blend of Gros Manseng (75%) and Petit Manseng (25%) . After gentle pressing and settling at low temperature, the Petit Manseng is fermented in barrels and the Gros Manseng in stainless steel vats . The wines are racked at the start of winter, then aged on the lees. It is bottled with 51 g/L of residual sugars.
