CANON Castle 2011
Château Canon is a 34-hectare estate located in Saint-Émilion , Bordeaux . It is classified Premier Grand Cru Classé B in the latest Saint-Émilion wine classifications. In 1760, the frigate lieutenant and privateer with the eponymous name - Jacques Kanon, originally from Blayais - acquired the Domaine de Saint-Martin thanks to the profits of the races he carried out on behalf of Louis XV at the expense of English ships. . He immediately undertook the construction of an elegant residence in the vicinity of which he developed the monoculture of the vine on all these plots, a very rare strategy at that time. Later in 1919, the Fournier family took over the reins of the château before handing it over to Chanel in 1996 . Château Canon occupies a limestone terrace facing south-west, at an altitude of 87 meters where Merlot and Cabernet Franc are grown.
Château Canon 2011 is a blend of Merlot (70%) and Cabernet Franc (30%) . Vinification by parcel is carried out in stainless steel vats. Malolactic fermentation takes place in stainless steel vats (2/3) and barrels (1/3). The aging lasts 18 months in French oak barrels of medium to long toast, 70% of which are new .
