Pauline & Hanneke - Vino PH - Palomino 2021
Vino pH is a collaboration of the “French & Africa Girl Team”: Pauline and Hanneke . Pauline Roux is a French winemaker based in South Africa, she also works with Paul Jordaan on the Paulus Wine Co project. Henneke is a South African winemaker. Motivated and disciplined in winemaking, they share the same work and life ethic. They produce two wines which are made in a rented cellar in the Paardeberg on Adi Badenhorst's farm.
pH Palomino comes from Palomino vines located 670 meters above sea level at the top of the Piekenierskloof. The vines were planted in the 1970s in Table Mountain sandstone. The vinification is carried out in two stages: half of the harvest is pressed and put into 500-litre barrels for fermentation. The other half is destemmed then fermented on the skins for 7 days. After pressing, this portion is also aged in old 500 liter barrels. The wine is aged in the bottle for 6 months.
