The Domaine des Hautes Glaces is located 896 meters above sea level in the Massif du Dévoluy, in the Hautes-Alpes . It was created in 2009 by Frédéric Revol , an agricultural engineer specializing in the management of living organisms. Its desire is to create excellent whiskeys that promote soil fertility and minimize the carbon footprint. To date, the distillery has mastered all stages of production, entirely in organic farming . The cereals come from 5 plots with different climatic and geological properties. Fermentation lasts approximately one week and distillation is carried out in two pairs of open-flame Charentais stills: a 2,500 liter wash still and a 700 liter spirit still.
Moissons is a barley whiskey from organic farming. It is distilled twice in pot stills heated over a wood fire. The whiskey is aged in various oak barrels (not. Petrea & Robur).
