Domain of Saint Cosme - Côte Rotie 2021
Located in the heart of the Gigondas appellation, Saint Cosme is a historic estate of a unique kind: its Gallo-Roman winemaking site is made up of fermentation vats carved into the rock. Acquired by the Barruol family in 1490, the property has seen 15 generations of winemakers succeed one another. It includes 22 hectares of old vines with an average age of 60 years. In 1972, Henri Barruol was already convinced by the interest of organic viticulture . He practiced it to respect his vines, produce clean wines and protect the ecosystem of the Saint Cosme valley. Today, Louis Barruol , his son, manages the estate and in 1997 created a “Négoce-Vigneron”.
Côte-Rôtie is made from Serine , an old Syrah. The vinification is carried out in whole bunches and the aging lasts 12 months in barrels , 30% of which are new.
