Domaine BOBINET - Hanami 2022
Domaine Bobinet is located outside Saumur , in the village of Beaulieu in the Loire Valley. The Saumur terroir is distinguished by the omnipresent tuffeau, the soft, white limestone rock which was used to build the famous castles of the Loire. The estate was formed in 2002 when Sébastien Bobinet took over 1.8 hectares of vines and cellar from his maternal grandparents who had retired 15 years previously. He now works alongside Emeline Calvez . The vineyard is managed organically, without certification.
Hanami comes from a blend of different plots of Cabernet Franc . The vinification is a combination of 3 separate macerations: part of the grapes is destemmed and put into gentle maceration for 20 days, another part of the grapes is destemmed and put into gentle maceration for 8 days and 30% of the blend is put into carbonic maceration. The three macerations are assembled at the end of fermentation then the whole is aged in concrete vats for 4 months .
