Distillerie du Petit Grain - Sap and Flower Gin - 47%
The Distillerie du Petit Grain is located in Saint-Jean de Minervois, in the Hérault region . The micro-distillery was created in the heart of the village by Patricia and Laurent Gaspard . They produce fresh, pure and fragrant eaux-de-vie with their still made in the workshops of Jean-Louis Stupfler, whose work is renowned for being present in the most demanding French and foreign distilleries. It is a copper still with an open flame , which requires delicate handling, but allows for precise heating and promotes the development of aromas.
The couple chooses organically grown fruits, healthy and at their optimal ripeness. Their philosophy is based on respect for the terroir, tradition and seasons, the apricots are pitted by hand, the marc is destemmed, no operation is mechanized. The distillates are not filtered, the heads and tails of distillation are discarded in order to keep only the heating hearts, which give low yields.
This gin is made from herbs harvested in spring around Saint-Jean de Minervois, in the Haut-Languedoc Regional Park. It is composed of juniper and cade, combined with notes of sap and flowers . The original recipe combines thyme flowers, fennel shoots and terebinth pistachio with wild lavender and pine cones.
"A delicate nose blending juniper, resin, and wildflowers. On the palate, the attack is fresh and vegetal, carried by thyme, fennel, and a woody note of sap. A gin that evokes the garrigue in spring, both pure and complex."
