Château Dompierre - Pauillac 2019
Château Dompierre is located in Saint-Laurent-Médoc , near Pauillac in Bordeaux . Michel Aroldi , born in Libourne, is heir to a long farming tradition. In 1993, he bought Château Plain-Point in Fronsac and established himself as a highly talented winemaker. Attracted by an evolution in terms of vintage, Michel Aroldi acquired Château Dompierre on the Pauillac terroir. He attaches great importance to respecting the ecosystem , the terroir and the vintage. Thus, from the vine to the breeding, he sets up a process of sustainable agriculture , inspired by simple and natural rules.
Château Dompierre is made entirely from Cabernet Sauvignon , meticulously sorted during the harvest. After the hand-picked grapes, the grapes are destemmed. Fermentation takes place in wooden vats with indigenous yeasts. The pomace cap is submerged and vatting lasts 7 weeks. Aging lasts 20 months in wooden vats from Nadalié, made of fine-grained French oak.
