Domaine Pattes Loup - Chablis Vent d'Ange - Late Bottling 2022
Domaine Pattes Loup is located in Courgis , in the Chablis region of Burgundy . Thomas Pico discovered a passion for viticulture at a very early age, growing up surrounded by a winegrower father and grandfather. He studied viticulture and oenology in Beaune and then joined the family Domaine du Bois d'Yver in 2004. A year later, in 2005, Thomas took over 8 hectares of vines from the family estate and also began planting his own vines in the place called "Pattes Loup" , hence the name of the Domaine. Today, Thomas farms 25 hectares of vines organically in the village of Courgis. The Domaine was certified organic in 2009. Thomas works a meticulous approach, focused on respecting nature in the vineyard, with a thoughtful winemaking style, unique to Chablis.
The Chablis Vent d'Ange Mise Tardive comes from the "Pattes Loup", "Les Menardes" and "Les Malentes" plots. The grapes come from the 2022 vintage, but bottling was later than the classic cuvée, aged for 3 years.
