Domaine Jean Dauvissat - Chablis 2023
Domaine Jean Dauvissat Père et Fils is located in Milly, in the Chablis appellation. The wines are produced in the Petit-Chablis, Chablis and Chablis Premier Cru appellations. The vineyard covers 22 hectares, in 7 communes and includes 53 plots. This very fragmented distribution makes it possible to obtain wines that are well representative of the entire Chablis vineyard, and in particular to benefit from the specific characteristics of the two banks of the Serein valley. The estate is currently converting to organic farming . No weedkillers or insecticides have been used since 2011, and biodynamic practices have been in place since 2018. The grapes are harvested at optimal maturity and then sorted upon arrival at the vat room. Each vintage is vinified according to its geographical location. Indigenous yeasts are used for fermentation and the aging is relatively long (1 to 2 years).
Chablis comes from plots located in three villages: Chapelle Vaupelteigne, Milly and Beines. After a long pressing and static settling of 12 to 24 hours, fermentation occurs spontaneously. Malolactic fermentation begins a long aging on fine lees which took place separately in demi-muids (50%) and in vats (50%) for 12 months . The wine is left to rest in bottle for a further 6 months .
