Mas des Chimères - Oeillade 2024
The Mas des Chimères is located in the commune of Octon on the edge of Lake Salagou , in the Terrasses du Larzac du Languedoc . The Dardé family worked the land in mixed farming (sheep, olive trees, vines) for several generations until the 1960s when livestock farming was abandoned in favor of vines. From 1974, Guilhem Dardé worked with his father and uncle. The grapes were then brought to the village Cooperative Wine Cellar. He moved into a private wine cellar in 1993 and created the Mas des Chimères. His wife Palma joined him in the vineyard from 1995, then Maguelone , his daughter, joined them in 2008. The vineyard is managed using certified organic farming .
Oeillade is made from Cinsault grown on red clay-sand soil, rich in iron oxide, with the presence of basalt blocks from the volcanoes surrounding the Salagou valley.
Grape variety: 100% Cinsault
"A very refined Cinsault, with a light color and a charming nose of wild strawberry, dried herbs, and warm stone. On the palate, the balance is subtle between crisp fruit and mineral structure, with a slightly spicy finish."
