Hervé Souhaut - La Souteronne 2024
Domaine Hervé Souhaut/Romaneaux-Destezet is located in Ardèche , on the right bank of the Rhône opposite the Hermitage hill. It was created in 1993 by Hervé Souhaut and has grown over the years through the planting of new vines and the successive purchases of various plots often planted with old vines (50 to 100 years old). Hervé Souhaut, a trained biologist who became a passionate and respected winemaker, cultivates his vines biodynamically without certification , using environmentally friendly cultivation methods. The vineyards are mainly planted with local grape varieties such as Syrah, Gamay and Roussanne. The grapes are harvested manually, and the winemaking process is minimalist , allowing indigenous yeasts to play their role and avoiding the addition of chemical additives.
La Souteronne is a cuvée made from the Gamay grape variety, a local selection aged between 60 and 80 years old. During vinification, the long maceration is carried out at low temperature, without destemming, then the wine is aged on fine lees . Bottling is carried out without filtration with less than 25 mg/L of sulfur.
