Champagne Billecart-Salmon - Blanc de Blancs Grand Cru
Founded in 1818 in Mareuil-sur-Aÿ, the Billecart-Salmon house has established itself among the great Champagne references by cultivating a style where the finesse of the effervescence and aromatic precision play an essential role. Still family-owned and independent, it perpetuates a philosophy based on the quality of supplies, mastery of vinifications, and the time devoted to aging its champagnes. Its Blanc de Blancs Grand Cru draws its identity from the chalky terroirs of the Côte des Blancs, the preferred territory of Chardonnay in Champagne. The grapes come exclusively from four Grand Cru classified villages: Avize, Chouilly, Cramant, and Le Mesnil-sur-Oger, whose complementary characteristics contribute to the personality of the blend. The chalk, omnipresent in these vineyards, promotes the vine's water regulation and contributes to the characteristic freshness of great Chardonnay champagnes. This cuvée holds a special place in the house's collection, with a profile that favors delicacy, depth, and a particularly refined expression of the Côte des Blancs.
Made exclusively from Chardonnay, this Blanc de Blancs is based on a meticulous blend of wines from the four Grand Crus, complemented by a significant proportion of reserve wines. These, representing between 20 and 50% of the blend depending on the editions, bring depth and help preserve the continuity of the house style. Vinification in tanks at low temperature favors the preservation of the delicate aromas of the grape variety and the precision of its expression. The wine then benefits from an extended maturation of about five years on lees in the house's cellars, a period during which the effervescence refines and the aromatic palette gradually gains complexity. This aging also develops a more enveloping texture, which balances the natural liveliness of Chardonnay. The Extra Brut dosage accompanies this quest for precision, leaving full room for the chalky character of the terroirs and the freshness of citrus fruits. The whole composes a champagne whose richness relies more on the quality of its material and the length of its aging than on aromatic power.
In the glass, this Blanc de Blancs Grand Cru presents a luminous pale gold robe, crossed with slightly green reflections and animated by particularly fine effervescence. The nose opens on white flowers, fresh lemon, and white-fleshed fruits, before revealing nuances of delicate brioche, fresh butter, and almond. On the palate, the attack is precise and lively, quickly extended by a creamy texture that brings volume without ever weighing down the whole. Citrus fruits, citron, and fresh almond accompany a characteristic chalky sensation, while the fineness of the bubbles contributes to the elegance of the tasting. The finish, persistent and slightly saline, maintains remarkable freshness and leaves a particularly pleasant impression of clarity. Its precision and depth make it a decidedly gastronomic champagne, to be paired with scallop carpaccio, fine oysters, citrus sea bream tartare, or roasted turbot. An Osciètre caviar will also make a particularly interesting pairing, while a few additional years in the cellar will further develop its brioche nuances and texture.
