Based in Montgenost, in the heart of the Côte de Sézanne, Marie Copinet cultivates an artisanal vision of Champagne. Blanc de Blancs Extra Brut represents the most crystalline interpretation of this approach. This non-vintage cuvée blends plots of Chardonnay selected for their maturity and freshness. Fermentation takes place in vats with measured intervention to preserve the brightness of the fruit, followed by aging on fine lees that adds depth without heaviness. A long rest in the bottle refines the effervescence, and the extra brut dosage, kept very low, emphasizes the saline reading of the terroir.
The nose opens with acacia blossom, yellow lemon, and green apple, joined by nuances of fresh almond, wet chalk, and a veil of fine brioche. The palate is straightforward and luminous, carried by a delicate effervescence that coats the palate without weighing it down. The heart of the palate unfolds flavors of lemon zest, crisp pear, and flint, with a satiny texture that gains in fullness with aeration.
