Nu comme Un Verre 2024 is a white cuvée vinified in stainless steel to preserve the fruit. Gentle pressing of grapes harvested early in the morning, gravity settling, then low-temperature fermentation. Short aging on fine lees to bring a light richness without masking the aromatic burst. Dry profile, moderate alcohol content, early bottling to preserve varietal brilliance.
On the nose, the pale color introduces aromas of fresh citrus, crisp pear, and white peach, with a floral touch and a chalky hint. The palate is lively and silky. Lemony attack, mid-palate on white-fleshed fruits and a hint of exotic fruits. The saline structure stretches the whole. Clean, thirst-quenching finish, carried by a fine bark bitterness.
Pairings and serving. Ideal as an aperitif, with oysters, whelks, sea bass ceviche, sushi, sea bream tartare, fresh goat cheese, or roasted chicken with lemon and thyme. Serve between 9 and 11°C in a tulip glass. Open fifteen minutes before serving. Enjoy immediately over two to three years.
