Domaine de Pajot - Armagnac First Age

The domain of Pajot is located in Bas-Armagnac, a region which is distinguished by its sandy soils called "sables fauves". The grape variety used is mainly Ugni Blanc, renowned for the finesse of its eaux-de-vie. Distillation takes place at the end of autumn, after fermentation and natural decantation of the wine.

The brandy is then poured into 400-liter oak pieces, thanks to which it will take its amber hue and develop, over time, a bouquet of subtle aromas: spices, prune, vanilla, rancio, toast ...
