Mas de la Séranne - Le Clos des Immortelles 2023
The Mas de la Séranne is located in the heart of the Terrasses du Larzac, on the southern foothills of the Massif Central, in a preserved natural environment where the vine grows alongside the garrigue. The plots are backed by wild hillsides where many aromatic flowers grow, including immortelles, which bloom in May and gave their name to this cuvée. The vineyards are often bordered by dry stone walls, a peasant heritage used to delimit plots and pile up stones removed from the soil. The vineyard rests on ancient terraces of the Hérault, mixing scree at the foot of slopes, yellow marls, and draining soils, ideal for producing wines of character combining power and freshness. The estate claims a sensible viticulture, attentive to the expression of the terroir and the natural balance of the grapes.
The cuvée Le Clos des Immortelles 2023 is a red wine from the AOP Terrasses du Larzac, made from a complex and Mediterranean blend combining Syrah, Cinsault, Mourvèdre, Grenache, Morrastel, and Carignan. Each grape variety brings its signature, between depth, freshness, structure, and spicy notes. The vinification is based on a traditional fermentation with a long maceration, allowing a progressive and controlled extraction. The aging is carried out for 13 months in oak barrels from Allier and the Centre, from one to three wines, to bring complexity and patina without masking the fruit. The 2023 vintage offers a beautiful maturity while retaining an energy and aromatic precision typical of the area.
On tasting, the color is purple red with violet reflections. The nose is complex and expressive, mixing notes of mocha, zan, soft spices, with a lot of brightness and aromas of thyme, white pepper, and blackcurrant. The palate is fleshy, candied, and fruity, supported by a spicy framework and good depth. The wine is ready to be tasted today after decanting but will reach its full harmony in one to two years and can be kept for more than five years. It will perfectly accompany spicy or sauced meats, game, stews, lamb tagines, or some characterful cheeses.
