Premier Grand Cru Classé "B" of the Saint Emilion appellation, this great wine has benefited from the considerable investments made by the Chanel house under the management of John Kolasa since the ownership of the property in 1996. Thus the vineyard was completely restructured with more than half torn off and replanted.
The vat room has been rearranged and the cellar buildings rebuilt, with a new barrel cellar made up of three air-conditioned spaces each intended to store 300 barrels. Two cellars are used for the first year and a third for the second year. Led by oenologist Gilles Pauquet, the vinification includes maceration between 28 ° C and 32 ° C for 3 weeks in thermo-regulated stainless steel vats.
Malolactic fermentation takes place mainly in vats, and aging in barrels, more than 50% of which are new. Thanks to these substantial efforts, Château Canon has regained its highest level of quality and all its letters of nobility, with a velvety style, an elegance and refined tannins which give it a good aptitude for aging.
