After distillation in Scotland or in mainland France, this Whiskey continues to mature in the tropical climate of Martinique. Whiskeys aged in these temperature and humidity conditions are very rare and recognized for their quality. If angels are particularly greedy (10% evaporation per year, against 2% in a continental climate), they are also very generous. It is recognized that the concentration of aromas and therefore the maturation is about 4 times faster.
"We began to imagine AIKAN in 2013, with the desire to offer a high-end French product that highlights the thousand-year-old know-how of French cooperage. To support this ambition, we called on the expertise of a World-renowned oenologist: Christian Vergier Specialist in whiskey but also in tropical aging through his experience acquired with the great rum houses whose vintages he has been making for years.
We also dreamed of innovating over time, using a wide variety of oak barrels, with different toasts, different species of oak, different volumes, new ones or even having previously contained another alcohol (for example a great rum ...) , and this in a tropical and oceanic environment "
