Château CANON 1992
Château Canon is a 34-hectare estate located in Saint-Émilion, in Bordeaux. It is classified Premier Grand Cru Classé B in the latest Saint-Emilion wine classifications. In 1760, the frigate lieutenant and corsair with the eponymous name - Jacques Kanon, originally from Blaye - acquired the Domaine de Saint-Martin thanks to the profits from the races he carried out on behalf of Louis XV at the expense of English ships. He immediately undertook the construction of an elegant house nearby which he developed the monoculture of the vine on all these plots, a strategy extremely rare at that time. Later in 1919, the Fournier family took over the reins of the chateau before selling them to Chanel in 1996. Château Canon is based on a limestone terrace facing south-west, at an altitude of 87 meters where Merlot and Cabernet Franc are grown.
The Grand Vin of Château Canon is a blend of Cabernet Sauvignon (75%) and Merlot (25%). The alcoholic fermentation lasts 10 days, followed by a 15-day maceration with three daily pumping over. The malolactic fermentation is carried out in stainless steel tanks and barrels. Aging lasts 18 months in barrels, 50% of which are new.
