Domaine Chibaou - Le Cabernet Sauvignon de Chibaou 2019
Domaine Chibaou is located in Saint-Félix-de-Foncaude in the Bordeaux wine region. It is a winery that has existed since the early 1900s, created by Christophe Rebillou's grandfather. When he returned to the estate in 2005 after working in Languedoc and the United States, there were 40 hectares in cooperative cellar. He bought four vats, a small press and a pump and made his first wine; Château Grenet 2005 which will be medalist at the Bordeaux Competition. Gradually, he enlarged the cellar and decided to go organic in 2008. In 2011, the cooperative cellar no longer existed and the 40 hectares were vinified in Saint-Félix-de-Foncaude. The estate is made up of three castles: Château Grenet (the historic one, on the clay-limestone slopes of Castelviel), Château Beyran (around twenty hectares but above all the cellars, offices and the house where Christophe grew up) and the Château Fontaine Fleury in Saint Laurent du Bois (bought in 2016 to develop an equestrian activity). The entire vineyard is certified in organic farming.
This cuvée is made from Cabernet Sauvignon. After the mechanical harvest, the grapes are sorted and then vinified in stainless steel vats, with fermentation at low temperature and a long maceration. Aging takes place in concrete vats.
