The Gevrey-Chambertin is made from Pinot Noir. The harvest is destemmed then the grapes are macerated for 3 to 4 days before the start of alcoholic and malolactic fermentation. In total, the fermentation lasts between 14 and 16 days with punching down in the morning and in the evening before decanting and aging. Aging lasts 16 months in barrels, 1/3 new oak, 1/3 of second-use and 1/3 of third-use. The wine from each barrel is blended before bottling.
