NATACHA CHAVE - Domaine Aleofane - Crozes Hermitage red 2021
Domaine Aléofane is located in Mercurol, in the Rhône Valley. The estate belongs to Natacha Chave , a graduate in philosophy of language and a specialist in animal metaphors at Nietzsche. Her parents vinified in Crozes-Hermitage, her brother took over the family estate and she chose to acquire her independence by buying her first plots in the Saint Joseph appellation area in 2004, and in Crozes-Hermitage in 2007. It does not use herbicides, insecticides or inputs during vinification and the vineyard is certified organic .
Crozes-Hermitage is made from Syrah and massal selections of Serine . The vatting lasts 4 weeks with daily pumping over. Depending on the plot, pigeages or shedding are carried out to promote extraction. The wines are barreled in demi-muids , and in ovoid vats for the Serines from the place called Les Chasselières.
