Domaine Philippe Bornard is one of the most famous in the Jura . Originally from the village of Pupillin, Philippe Bornard had always worked the vines but sold his grapes to the village cooperative cellar before taking the plunge, in 2005, to produce his own wines. Today, Tony Bornard (his son) operates the estate which extends over 11 hectares in Arbois-Pupillin, and in Côtes du Jura. The vineyard is planted with Chardonnay, Savagnin and Melon for the white grape varieties and with Ploussard, Trousseau and Pinot Noir for the red grape varieties. The vines are cultivated with respect for the environment, in organic certification with very little human intervention.

This cuvée is a Savagnin Ouillé . Topping up is a periodic action aimed at always maintaining the maximum level of barrels and vats in order to compensate for losses due to absorption or evaporation. Thus, the wine is vinified in a non-oxidative way and reflects the characteristic minerality of the terroir.
