Domaine de Tremica - Donu Di Cinarca 2021
Domaine de Tremica is located in Casaglione, southern Corsica . It was founded in 2011 by Angelica and Richard Arnaud Le Foulon . The estate covers 6.5 hectares in the Cinarca region, where the Tremica archaeological plateau is located. The vineyard is certified organic and is in the process of being certified biodynamic. With the aim of respecting the life and balance of the wines, both in the cellar and in the vineyard, the lunar calendar is central to the couple's organization, guiding their choice of blending and bottling days.
Donu di Cinarca is made from Carcaghjolu Neru , the oldest endemic Corsican grape variety. The harvest, destemmed and uncrushed, is placed in a wooden truncated vat for a vatting period of 3 weeks to 1 month. During maceration, punching down and pumping over are carried out. The wine is aged for 30 months in 160-litre terracotta jars (50%) and demi-muids (50%).
