Domaine Henri Chauvet - Abrupts 2023
Domaine Henri Chauvet is located in Boudes, in the Auvergne region . Formerly Domaine Sauvat, it was taken over in 2021 by Henri Chauvet, a former banking professional who became a winemaker. After obtaining a BTS in viticulture and oenology in 2020, he trained in Cornas with Thierry Allemand. Henri Chauvet cultivates 10.5 hectares of vines spread over hillsides with varied soils, including basalt lava flows and colored marls. Upon his arrival, he began a conversion to organic farming, adopting practices that respect the terroir, such as manual soil cultivation and the use of indigenous yeasts for winemaking. His wines, unfiltered and often without added sulfur, aim to faithfully reflect the diversity of the region's terroirs.
Abrupts is made from Gamay grapes from a volcanic terroir composed of basalt and blue marl. The wine is aged for 9 months in old barrels.
