Château GISCOURS 2000
In the heart of the Margaux appellation, Château Giscours benefits from a vast terroir of deep gravel soils, among the most structuring in the commune of Labarde. The third Grand Cru Classé in 1855, the estate has an ancient history and relies on a vineyard where Cabernet Sauvignon finds particularly favorable conditions for slow and regular ripening. Merlot completes this structure by bringing more flesh and suppleness, while other Médoc grape varieties intervene more discreetly depending on the vintages. The gravelly relief ensures excellent drainage and allows the wine to retain finesse and freshness even in generous years. The 2000 vintage, which has become emblematic in Bordeaux, offers Giscours a combination of maturity, density, and balance particularly favorable to long evolution. After more than twenty-five years in bottle, the wine has now surpassed its youthful expression to enter a phase where the fruit blends with more complex tertiary nuances. This evolution highlights the classic character of Margaux, with a softened structure but still carried by beautiful energy.
Château Giscours 2000 is based on a blend dominated by Cabernet Sauvignon, complemented by Merlot. The Cabernet provides the backbone, an expression of blackcurrant and graphite as well as great persistence, while Merlot contributes to giving more roundness in the mid-palate. The grapes are vinified parcel by parcel to preserve the characteristics of each terroir before composing the final blend. Aging in barrels then gradually supports the structure and refines the naturally abundant tannins in this vintage. The richness of the 2000 vintage allows the wine to still retain a deep substance today, while time has largely softened the woody nuances and mellowed the initial framework. The primary aromas have gradually evolved towards notes of tobacco, cedar, and undergrowth, without completely erasing the black fruit. A perfectly preserved bottle can still continue its evolution, but it is now in a particularly interesting tasting window.
The color today shows a deep garnet with ruby nuances and slightly brick hues on the rim. The nose combines ripe blackcurrant, blackberry, and black plum with notes of violet, cedar, and blond tobacco. Aeration gradually reveals fine leather, undergrowth, licorice, and graphite nuances that accentuate the Médoc character of the whole. The palate retains a beautiful breadth, with now polished tannins that give a smoother and more harmonious texture. The evolved fruit remains supported by sufficient freshness to maintain precision until the finish. The latter extends on tobacco, spices, graphite, and a slight earthy dimension, in a now fully mature register. Château Giscours 2000 will accompany a roasted rack of lamb, a beef fillet with cep mushrooms, pigeon, feathered game, or cuisine featuring black truffle.
