Château La Baronne - Le Rolle 2025
Situated at the foothills of the Alaric mountain, between Carcassonne and Narbonne, Château La Baronne is one of the most committed estates in the Corbières region. The family property is currently managed by Anne and Jean Lignères, a doctor and winemaker like his father before him. Their vineyard forms a vast ecosystem where plots border scrublands, hedges, trees, and natural spaces, in a constant search for balance between cultivation and biodiversity. Organic and biodynamic farming practices accompany a philosophy based on soil observation and the preservation of their vitality. The estate pays particular attention to Mediterranean grape varieties, aiming to preserve freshness rather than accentuate solar ripeness. The Rolle stands out in this range by vinification in ceramic containers, designed to maintain the fruit's clarity while developing texture. The 2025 vintage also bears the mark of a challenging year for the estate, severely affected by fires, which gives the preserved volumes a particularly rare dimension.
This cuvée is made exclusively from Rolle, also known as Vermentino, from vines established on fluvial terraces of sandstone pebbles and clay-limestone soils. These well-drained soils, combined with the dry and windy climate of the Alaric massif, promote regular ripening while maintaining precious acidity in the grapes. Harvesting is done manually, with a first sorting in the vineyards followed by a new selection upon arrival at the winery. After destemming, fermentation takes place in small containers, including jars, dolia, and lying sandstone eggs. Aging continues for several months in these same materials, allowing slow wine breathing without imparting wood aromas. This approach gives more volume to the Rolle while preserving its floral, lemony, and slightly herbaceous character. Bottling without fining or filtration finally preserves the substance and natural nuances of this Mediterranean interpretation.
The color shows a bright pale yellow, nuanced with silvery and slightly golden reflections. The nose opens with ripe lemon, fresh pear, and white flowers, then gains hints of fennel, almond, and wet stone. A few minutes of aeration reveal notes of citrus peel, dry herbs, and white peach, without aromatic exuberance. The palate is straight from the attack, supported by clear acidity and delicately enveloping substance from ceramic aging. The fruit gradually gives way to a more mineral expression, mixing fine bitterness, chalky sensation, and persistent salinity. The finish has remarkable energy, extended by lemon, fresh almond, and an iodized touch. The Rolle 2025 will accompany sea bream ceviche, white fish tartare, shellfish, cod brandade, grilled vegetables, or fresh goat cheese.
