Domaine des Ardoisieres - Red Clay - Organic 2017

The Argile cuvées from Domaine des Ardoisières come from a hill located in the town of Saint-Pierre-de-Soucy. The soil consists of hard black shale and clay. On this less steep slope than the Cevins slope, we find more standardized yields around 40 hl / ha. Argile Rouge 2016 is a blend of Gamay 80% and Persian 20%, the latter bringing richness, tannins and notes of violet. Vinification in vats, short maceration, 8 months aging in vats, light filtration, 5000 bottles produced.

This cuvée has a cellaring time of around 5 to 8 years and will go wonderfully with cold meats, red meats and certain cheeses.
