Domaine d'Auvenay, owned by Lalou Bize-Leroy, is one of Burgundy's most sought-after and secretive estates. Located in Saint-Romain, it embodies a definitive vision of wine: fully biodynamic viticulture, tiny yields, rigorous grape selection, and long aging processes, carried out with rare rigor. Each vintage reflects a crystalline interpretation of the terroir, in a style of incomparable purity and intensity.
The 2019 Bourgogne Aligoté Sous Chatelet perfectly exemplifies this philosophy. Coming from a tiny plot planted on high-altitude limestone soils, this wine transcends the appellation with its density and brightness. The grapes, harvested at peak ripeness, are gently pressed before natural fermentation in oak barrels. The long aging on lees, without excessive stirring, gives the wine a deep texture while preserving a rare mineral tension. The sunny and balanced 2019 vintage reveals an Aligoté of exceptional intensity.
The nose unfolds a palette of precise aromas: ripe lemon, fresh almond, white flowers, and flint. On the palate, the substance impresses with its density and energy. This wine for connoisseurs pairs well with langoustine carpaccio, roast turbot, or mature Comté cheese. Serve between 11 and 12°C, after opening for 30 minutes to 1 hour.
