DOMAINE DE CHEVALIER 2019
In Léognan, at the heart of the Pessac-Léognan appellation, Domaine de Chevalier occupies a unique terroir, surrounded by forests that naturally temper the vineyard's climate. Owned by the Bernard family since 1983, the estate is among the Classified Crus of Graves and has built a reputation based on precision, consistency, and a remarkable aging potential. The gravelly soils rest on subsoils mixing clay and sand, offering the Cabernet Sauvignon effective drainage while retaining precious water reserves. Merlot brings more flesh and suppleness, while Petit Verdot completes the blend with a spicy and structuring dimension. Vineyard management favors precise observation of plots and maturities to preserve the natural balance of the grape. The warm and bright 2019 vintage benefited from a particularly favorable end of the season for the maturation of the Cabernets. Domaine de Chevalier 2019 thus combines depth, freshness, and finesse in a style both classic and particularly accomplished.
The blend of Domaine de Chevalier 2019 is based on 65% Cabernet Sauvignon, 30% Merlot, and 5% Petit Verdot. Cabernet Sauvignon builds the backbone of the wine with notes of blackcurrant, graphite, and cedar, supported by a precise tannic framework. Merlot adds more breadth to the mid-palate and brings a more enveloping texture without erasing the terroir's tension. Petit Verdot completes the structure with spicy nuances and additional depth. The different plots are vinified separately to preserve their personality before composing the final blend. Aging in French oak barrels gradually refines the material and accompanies the maturation of the tannins without masking the fruit's brightness. Still young, the 2019 has a perfectly drawn architecture that promises a particularly harmonious evolution over several decades.
The color shows a deep garnet with still intense ruby reflections. The nose combines blackcurrant, blackberry, and black cherry with notes of violet, cedar, graphite, and licorice. Aeration gradually reveals blond tobacco, fine spices, a smoky touch, and delicate cocoa nuances. The palate stands out for its precision, with dense but perfectly controlled material and fine tannins that provide structure without harshness. Freshness is one of the wine's guiding threads and maintains remarkable energy through to the finish. The finish lingers long on black fruits, graphite, spices, and a subtle smoky imprint characteristic of the great reds of Pessac-Léognan. Domaine de Chevalier 2019 will accompany roasted rack of lamb, beef fillet with porcini mushrooms, pigeon, veal with morels, or refined cuisine around black truffle.
