Mas des Chimères - Nuit grave 2022
The Mas des Chimères is located in Octon, in the heart of the Coteaux du Salagou, in Hérault, on a spectacular terroir of red ruffes and volcanic basalts overlooking the lake. The estate is managed by Paloma Vergara and Olivier Ferry, major figures of quality Languedoc, who very early on committed to demanding and engaged viticulture. The vineyard is managed with Demeter-certified biodynamics, with precise soil work, naturally low yields, and constant attention to the expression of life. The vinifications are minimally interventionist, seeking above all the accuracy and sincerity of the terroir.
The cuvée Nuit Grave 2022 is a characterful red wine made exclusively from old Carignan vines, planted on basaltic soils rich in iron oxide. This terroir gives the wine a unique depth, a strong structure, and a remarkable mineral freshness despite the Mediterranean climate. The 2022 vintage, sunny and concentrated, was controlled by precise harvesting allowing balance and tension to be maintained. The aging is conducted with sobriety so as never to mask the raw identity of the grape variety and the soil.
On tasting, Nuit Grave reveals an intense nose of ripe black fruits, garrigue, and spicy notes, enhanced by a slightly smoky touch. The palate is dense, structured, supported by deep but silky tannins, and a mineral framework that lengthens the finish with energy. This powerful and elegant wine will ideally accompany grilled meats, stewed dishes, or spicy Mediterranean cuisine, while offering excellent aging potential.
